    National Noodle Day is today and we are getting ready to celebrate it by doing the best thing possible with noodles … eating them! Can you believe that noodles have been around for over 4,000 years? Noodles are popular all over the world and range in shape from flat, to round, to twisted, to sheets, to tubes and many more. They can be made from rice, buckwheat, wheat, with or without eggs and even now, from zucchini.


    To celebrate this perfect national noodle day, we have prepared a TREAT for you. These spicy garlic wok noodles are UN-REAL. Seriously. It's super quick and you will have it on the table in less than 40 mins from start to finish!


    It is loaded with veggies and is an ultra-flexible recipe. Change up the veggies based on what you have in the fridge - green beans, cabbage, carrots, mushrooms, or bean sprouts - they all work great!


     


    Ingredients :


    • 1 tbsp vegetable oil

    • 325 g firm tofu

    • 1 tbsp ketjap manis

    • ½ tbsp sesame oil

    • 3 medium shallots

    • 5 cloves garlic

    • 1 small broccoli

    • 185 g quick-cooking ramen noodles

    • 1 red bell pepper

    • 1 cup cherry tomatoes

    • 2 tbsp dark soy sauce

    • 2 tbsp sambal oelek (or less for less spice)

    • 1 sliced spring onion

    • Pinch of toasted sesame seeds

    Preparation Method :

    1. Cut shallots, garlic, bell pepper, tofu into 1cm cubes and broccoli into bite-sized florets.
    2. Place your Ultimate nonstick wok on high heat and add the oil. When hot, add the tofu. Stir every few minutes, but be careful not to over-stir as the tofu can crumble.
    3. When lightly golden on all sides, add the ketjap manis, toss to coat and remove from the heat.
    4. Place your Ultimate nonstick wok on medium-high heat, add the sesame oil, shallots, garlic and broccoli and cook for 6 minutes.
    5. Cook the noodles according to the package instructions. Ideally, drain when the noodles are 2 minutes away from being al dente. Run the noodles under cold water.
    6. Add the drained noodles to the pan with the broccoli. Also add in the tofu, bell pepper, tomatoes, soy sauce and sambal oelek. Toss to coat and heat until the noodles are fully cooked.
    7. Serve in your favourite bowls, top with desired garnish and enjoy!


     


    Tips :

    Ketjap manis is a slightly thick, sweetened soy sauce commonly used in Indonesian cuisine. Store in an airtight container in the fridge for up to 3 days.
