Preparing pancakes is a fun and creative activity for your children this Easter. Create beautiful Easter bunnies and have fun!

Preparation Method :
1. Sift the flour, baking powder, salt and caster sugar into a large bowl.
2. In a separate bowl, lightly whisk together the milk and egg, then whisk in the melted butter.
3. Pour the milk mixture into the flour mixture and, using a fork, beat until you have a smooth batter. Any lumps will soon disappear with a little mixing. Let the batter stand for a few minutes.
4. Heat a nonstick frying pan over medium heat and add a knob of butter.
5. When the butter has melted, add two ladles of batter. The consistency will look very thick but this is how it should be.
6. Wait until the top of the pancake begins to bubble, then turn it over and cook until both sides are golden brown and the pancake has risen to about 1cm thick.
7. Repeat the process, until all the batter is used up.
Assembling the bunny pancakes:
Place one pancake on a plate.
EARS: Cut another pancake in half to make the ears and place behind the first pancake. Using a shot glass or a cookie cutter, cut out 2 circles from another pancake and place circles, side by side, on top of the first pancake as cheeks.
TOP EARS: 2 sliced strawberries.
EYES: 2 sliced bananas and blueberries for the eyes.
NOSE AND MOUTH: Cut the bottoms of 2 strawberries.
WHISKERS: Shredded carrots.
Tips :
For extra-fluffy pancakes substitute plain flour for self-raising flour and still use the baking powder. If you are following a gluten-free diet, replace the baking powder with the gluten-free alternative and the plain flour with rice flour, as its texture is ideal for pancake preparation.
