    This delightful stir-fry combines tender asparagus and crispy tofu, infused with the flavours of ginger, garlic and chilli oil. It’s versatile enough to serve as a side dish or as the star of a main course when paired with noodles or rice. Plus, it comes together in under 15 minutes, making it ideal for busy weeknight dinners or a light lunch option. For added convenience, you can even prepare the marinade the night before, ensuring a quick and flavourful meal on the day. Enjoy!


     


    Ingredients :


    • 350g block of tofu

    • 1 heaped tbsp cornflour

    • 200g asparagus

    • 3 large cloves garlic

    • 1 thumb-sized piece of ginger

    • 2 tbsp sesame oil 1 tbsp tamari or soy sauce

    • 1 tbsp chilli crisp oil (if you don’t have this, add 1 tsp chilli flakes to the marinade)

    Preparation Method :

    1. Start by draining the tofu and cutting it into bite-sized cubes.


    2. Coat the tofu cubes in corn flour to give them a crispy texture when fried.


    3. Heat a nonstick pan over medium heat and add a drizzle of sesame oil. Fry the coated tofu cubes in the pan until they turn golden brown and crispy.


    4. Mince some garlic and ginger.


    5. In a separate bowl, combine the minced garlic and ginger with oil and tamari (or soy sauce). Whisk the mixture together to create a flavourful marinade.


    6. Once the tofu cubes are crispy, pour the marinade over them in the nonstick pan. Continue frying on medium heat until the tofu absorbs the flavours and turns golden.


    7. Chop fresh asparagus into smaller pieces. Add the chopped asparagus to the same pan and fry for an additional 2-3 minutes.


    8. Plate the tofu and asparagus mixture. Drizzle some chilli crisp oil over the top for extra flavour.


     


    Tips :

    If you don’t have chilli oil, you can add 1 teaspoon of chilli flakes to the marinade. Serve this dish as a side or pair it with sticky rice or noodles, along with more chilli oil if desired.
