This week in our series of Winter Warmer recipes, this classic and simple cake is ideal for a lazy weekend afternoon in front of the TV or fireplace.
The traditional recipe includes only apples but the addition of raspberries will add an extra special touch.
This cake is best served while it’s still warm and the addition of cream will make it even better.

Preparation Method :
1. Preheat the oven to 200ºC. Grease and line with parchment paper and an SQ Professional loaf tin.
2. Peel and core the apples and slice them into thin slices. Grease the loaf tin with butter and add the apple slices and sprinkle with caster sugar.
3. Reduce the oven temperature to 180ºC and bake the apples for 10 minutes, remove from the oven and set aside.
4. In the meantime, whisk the eggs, the 160g caster sugar and vanilla extract until the mixture is thick and mousse-like.
5. Melt the butter and mix it with the milk.
6. Incorporate the milk and butter mix into the egg mousse.
7. Sieve in the flour and baking powder and fold carefully into the batter, so there are no lumps of flour.
8. Pour the mixture into the prepared loaf tin.
9. Add the raspberries on top and incorporate them into the batter with a fork.
10. Sprinkle sugar on top and bake it in the preheated oven for 25 to 35 minutes, or until well-risen and golden brown.
11. Cool in the tin, then unmould on a plate.
12. Serve warm with delicious cream on top.
